Product Description

Twain is a light beige to light yellow paste-like or viscous oily liquid at room temperature. It has a distinctive oily smell and a slightly bitter taste. Twain has good thermal stability. Due to the fact that the long chains of polyoxyethylene form hydrophilic groups, the hydrophilic groups occupy a dominant position in the entire emulsifier molecule. Therefore, Tween has a very high hydrophilic performance and HLB value, and belongs to the O/W type emulsifier. Its surface activity is not affected by environmental pH. At a very low usage concentration (0.05%), it can significantly reduce the interfacial tension of the soybean oil/water system. Twain itself is water-soluble and has a good solubilizing effect on lipophilic substances that are difficult to dissolve in water. It can be used to prepare emulsified essences. It also has a good inflating and stirring foaming effect in food. It has a very good stabilizing effect on certain lipid crystals. Tween is widely used in the food industry. It can be used as an emulsifier, stabilizer and dispersant in baked goods such as bread, cakes, ice cream and shortening.
